Can someone please explain to me what the colours mean?
For example some of my horses are Blue, some are Yellow and some are Red?
And my stallions are C,B,A
What does this mean and what is best & how can I get my breeding horses better :) -
Mares are colors, stallions/geldings are letters. Starting from the best: Star*/Gold*, Blue/A, Red/B, and Yellow/C then below that is Showable Only/Failed.

What factors come into my horses being Star* rather than yellow for example -
Sorry, I'm still new so I don't have a great answer for you. I'm sure someone else will though! There is a great explanation in the Basic Information for New Players, which tells you how to increase your horses paper levels.

Consider the colors (or letters, depends boy or girl) as levels. You breed the color + letter together to try and get the next one up. Yellow + C to try and make Red or C for example.
Breeding a star colt to a yellow mare or the like (bootstrapping) leads to weird results and you want to know what you are doing first. For now the best move is yellow/c, red/b, blue/a, gold/star. Any herd helper with the word exceptional in it is red/b. Most other herd helpers are yellow/c. -
The paper level of your horse testing Yellow instead of Blue, or C instead of A, etc. is due to the hidden stats a horse has for its breeding ability. So a horse with better breeding ability will test with a better paper level than a horse with lower breeding ability. So paper levels are a way to help you determine how good of a producer a horse is.Ramshorn Ranch

How do you get papers on a horse? I just started today and I can't find anywhere that tells how to do this. I found the explanation of what they mean, but I can't find a breeding inspections option on my horse's page.
