    Here’s Confluence’s contribution
    I try, every year, to make a familiar recipe with a twist. Green Beans Almandine will be taking the place of the standard Green Bean Casserole this year!
    Green Beans Almandine
    2 cans of cut green beans
    1 lb bacon, cooked and crumbled
    1 package of slivered almonds
    1 onion, chopped
    Salt and Pepper to taste
    Directions:
    Fry the bacon and set aside.
    In the bacon grease sauté onion and slivered almonds until the almonds are lightly browned. Use as much or as little almonds and onions as you like.
    Drain the green beans and add to the pan with the almonds and onions. Add the bacon. Let it simmer for 15-20 mins then serve

    Not everyone likes sweet potatoes, but I think they're delicious. I love eating this dish for fall and winter holidays.

    This has been a stew made every Winter Nights/Vetrarnætur festival in my family since I can remember. Now that I live in the US, I make the stew every Thanksgiving for my extended American family here. This is the best and closest recipe I found in English in case others want to try it! It's really delicious, warming, filling, and fits in with Thanksgiving well.

    Icecream Sandwich Casserole

    I know this isn't quite a dinner recipe, but it's got "casserole" in the title, so I think it could be argued as a main dish :)) This is something I used to help make with my grandma when I was little. It is extremely easy and requires no baking or cooking

    Ingredients:
    - Icecream sandwiches
    - Coolwhip
    - Chocolate sauce
    - Caramel sauce
    You'll need a casserole dish and a freezer.

    Take your casserole dish and line the bottom with the icecream sandwiches (you may need to cut some to fit). Then add a layer of Coolwhip. Drizzle the chocolate and caramel sauce over the Coolwhip. Lead with your heart for how much chocolate and caramel to add. Then begin the next layer of icecream sandwiches, Coolwhip, and chocolate and caramel drizzle. Just keep layering until you run out of space! I recommend to try to make the last chocolate and caramel drizzle pretty with some nice zig zags, but again, it's important to lead with your heart on this step. Once your layers are done, put it in the freezer for at least an hour. Then it's ready to go!
    Bonus: if you have any icecream sandwiches left that didn't fit, you can eat those while your waiting! =P~

    Mac and Cheese

    1lb Cheddar Cheese
    1/2 An Onion
    2 Cloves of Garlic, Smashed
    1/2 A Cup Butted
    1/3 Cup Flour
    1 1/2 cup Whole Milk
    1/2 Cup Heavy Cream
    8oz Cream Cheese
    2lbs Pasta
    Salt
    Pepper

    Sauce
    Chop the onion finely and sauté it in the butter, with the smashed, but whole, pieces of garlic. Sauté until the onions are browned. Pull the chunks of garlic from the mixture, before adding the flour. Stir all the flour in and let it sit on low heat, until it starts to bubble up. Add the milk and cream. Stir until thoroughly combined. Cook on medium to low heat, stirring occasionally until the mixture thickens. Add the cheese, shredded mixes easier, but chunks work just as well. Mix the cheese until the mixture is smooth. Add the cream cheese. If using a block (highly recommend) chop into cubes. Mix into the sauce. Add salt and pepper to taste.

    Pasta
    Boil a pot of water while making the sauce. Add in a spindle of salt while it boils. When the water is in a boil, add the pasta. Cook the pasta until it is tender, but not mushy. Drain it thoroughly. Avoid leaving the pasta in the hot water to long, to avoid over cooking.

    Combine the sauce and pasta and you’ve got a yummy meal.

    If you wish to bake it:
    Add the mac and cheese to a baking dish. Mix bred crumbs and shredded cheese. Bake at 350 until the top is bubbly

    THE most controversial dish at my family gatherings! I present:

    Macaroni Fruit Salad

    1 package macaroni rings, cooked and drained
    1 #303 can crushed pineapple, drained (reserve juice)
    1 #303 can fruit cocktail, drained (reserve juice)
    2 c. mandarin oranges, drained (reserve juice)
    2 tbs. lemon juice
    2 tbs. flour
    1/2 c. sugar
    4 eggs, beaten
    1 pkg. miniature marshmallows
    1 pint whipped cream

    Combine lemon juice, flour, sugar and juices. Cook until thick. Remove from heat, add eggs and heat again. Cool slightly, then add macaroni and fruit. Chill several hours. Add marshmallows and whipped cream. Chill overnight.

    You will like it, or you will hate it. There is no "meh." Me? I like it. It's weird. Except the grapes from the fruit cocktail. Those are not good.

    This is a plain old regular traditional Thanksgiving dish, but I make it every year for my dad. It's his mother's recipe, she made every year until she couldn't and then she shared with me so daddy could still have it every year.

    Grandma's Whole Cranberry Sauce
    Fresh orange juice from 2 oranges, add enough water to make 1 cup liquid
    3/4 cup sugar
    1 (12 oz) bag fresh or frozen cranberries (do not use dried)
    Zest of one orange (tip: zest the second orange and dehydrate or freeze for later use)
    Splash of vanilla (maybe 1/2 teaspoon)
    Pinch of salt

    Bring juice and sugar to a boil over high heat, until sugar is dissolved. Add berries, zest, vanilla and salt, return to a boil. Reduce heat to medium, cook at a low boil for approximately ten minutes or until most berries have burst. Stir frequently. You may mash them gently with a spoon. Transfer to dish and chill until ready to serve. I usually make it the day before, it can keep for a week or slightly longer covered in the refrigerator or frozen for a couple months.
  • A very popular favorite in my house is our homemade apple cranberry stuffing

    1/2 cup (1 stick ) butter
    2 cups chopped celery
    1 cup chopped onion
    2 medium chopped red apples
    1 bag cranberries
    1 teaspoon Parsley flakes
    1 teaspoon rosemary leaves
    1 teaspoon Thyme leaves
    6 cups dry unseasoned bread cubes
    1 can chicken broth
    1 cup apple juice

    1. Preheat oven to 325°F. Melt butter in large skillet on medium heat. Add celery and onion; cook and stir 5 minutes or until softened. Stir in apples, cranberries, parsley, rosemary and thyme.
    2. Place bread cubes in large bowl. Add celery mixture, broth and apple juice; toss gently until well mixed. Spoon into lightly greased 13x9-inch baking dish. Cover with foil.
    3. Bake 15 minutes. Remove foil; bake additional 20 minutes or until heated through and lightly browned.

    I'm a big fan of green beans bacon and garlic. Not so much on mushrooms,
    but if you like them you can add them in after the bacon for about 4 or
    5 mins. This is my fav for the holidays!

    Green Bean Casserole with Bacon & Cheese

    1 pound fresh green beans rinsed & halved
    2 slices bacon diced
    1 teaspoon salt
    1/2 teaspoon black pepper
    2 cloves garlic minced
    2 tablespoons all purpose flour
    1 cup chicken broth
    1 cup half and half
    1 (2.8 oz) can French-fried onion rings divided in half
    1 cup shredded cheddar cheese


    - Bring a large pot of salted water to a boil.
    - Cook green beans for 3-5 minutes.
    - Drain the green beans and immediately place them into a large bowl filled with ice water to stop the cooking process.
    - Drain again and set aside.
    - Preheat oven to 400 degrees F.
    - Place diced bacon in a cast iron skillet/pan and cook over medium heat for 5 minutes, stirring regularly.
    - Stir in the garlic, salt, and pepper and cook for about 30 seconds.
    - Stir in flour and cook for 1 minute.
    - Add the broth and simmer for 1 minute, gently scraping up any brown bits.
    - Lower the heat to medium-low and slowly stir in the half-and-half.
    - Cook for about 6-8 minutes, or until the mixture has thickened, stirring occasionally.
    - Remove from the heat.
    - Gently stir in the green beans and half the can of onion rings (about 3/4 cup).
    - Top with shredded cheddar cheese and remaining onion rings.
    - Bake for 10-15 minutes, or until heated through and bubbly.

    Serve immediately.

    Sweet Potato Casserole

    INGREDIENTS
    FOR SWEET POTATOES
    Cooking spray
    4 c. large sweet potatoes, peeled and cubed
    1/2 c. packed brown sugar
    8 tbsp. (1 stick) butter, melted
    1 tsp. pure vanilla extract
    1/2 c. milk
    2 large eggs
    1/2 tsp. kosher salt

    FOR STREUSEL TOPPING
    1 c. packed dark brown sugar
    1/2 c. all-purpose flour
    4 tbsp. butter, melted
    1 c. chopped pecans
    2 1/2 c. mini marshmallows
    Preheat oven to 350° and grease a 9-x-13" baking dish with cooking spray. Place sweet potatoes in a large pot and cover with water. Bring to boil then reduce heat and simmer until the sweet potatoes are tender, about 15 minutes. Drain and let cool slightly then transfer to a large bowl.
    In a large bowl, stir together sweet potatoes, sugar, butter, vanilla, milk, eggs, and salt until smooth. Pour into prepared dish.
    In a medium bowl, stir together sugar, flour, and butter until it clumps. Stir in pecans, then spread evenly over potatoes. Top with marshmallows.
    Bake until cooked through and golden, about 30 minutes.
