It sure is a lot to learn! For a horse to be black they must have at least one copy of the dominant black gene (so EE or Ee) and two copies of the recessive bay gene (aa). The first two horses you listed also have one copy of cream so they would actually be "Smokey Black" like this horse here.

The last horse you listed also has a copy of Champange and Dun so a bit more complicated. A black horse with just the Dun gene (D) would be Grullo. A black horse with the dun and cream gene would be a Smokey Grullo.
Champange is a very dominant gene that overrules everything and will always have Champange in the name. A black horse (EE aa or Ee aa) with one copy of Champange is a Classic Champange.
Onto Pearl... Pearl and Cream actually share the Cream gene. To show, you must have either two copies of pearl or one copy of pearl and one copy of cream. With one copy of cream, it would be a Smokey Black Pearl, with two copies of Pearl it would just be a Black Pearl.

Okay so lonnnggg explanation for your question but hopefully it helps! If it was me, I would start with the second horse you listed which requires the least amount of GMT work as she is already Ee Aa. Change the A to an a to make her a Smokey Black and then add Pearl to her second strand (not the one with cream on it) and see what you think! GMT work is definitely a learning process so don't be afraid to take it slow! -
